These are arginine, tryptophan, isolecin and lecine, valine, methionine, lysine, glutamic acid, histidine, proline, glycine, serine, threonine, aspartic acid, alanine, phenylalanine, tyrosine, cysteine and cystine. Most of these amino acids are essential or conditionally essential. And lysine, methionine and tryptophan, the content of which in the cedar kernel protein is increased, are the most deficient amino acids, by which the biological value of the protein is determined. Of the vitamins, pine nuts contain: vitamin A, vitamin B1 (thiamine), vitamin B2 (riboflavin), vitamin B3 (niacin), vitamin E (tocophenol). Macro- and microelements contained in pine nuts: copper, magnesium, manganese, silicon, vanadium, potassium, phosphorus, calcium, molybdenum, nickel, iodine, tin, zinc, boron, iron. Small amounts of pine nuts also contain titanium, barium, silver, iodides, aluminum, sodium and cobalt. The carbohydrates in the composition of the cedar kernel are as follows: glucose, fructose, sugars, sucrose, dextrins, pentosans, starch and fiber. Not deprived of useful substances and pine nut shell, which is up to 60% of the weight of the seed. It contains a lot of fiber, amino acids, tannins, trace elements and sugar.
